Soetkoekies Recipe

As winter approaches, the average intake of tea starts to increase. To prepare you for this we are sharing our famous soetkoekies recipe with you. They are the perfect partner for a cup of tea and are so quick and easy to make. Warning: the dough is addictive, try not to eat it all before you put the biscuits in the oven!

Ingredients:
2 cups flour
a pinch of salt
2 tsps baking powder
1 cup sugar
1/2 cup butter
1 egg
vanilla essence

Method:
1) sieve flour, salt, and baking powder, add sugar
2) rub butter in
3) add egg
4) mix to a stiff dough (add a little water if necessary)
5) roll out thinly and cut out shapes
6) place on a greased baking tray, be sure to leave a big enough space because they spread during baking
7) bake at 200 degrees C for 7-8 mins
8) take off tray immediately while soft as the biscuits harden when cool
9) enjoy :)
